Meet the guide near one of Madrid’s historic markets that has been active for over a century. Go inside to see a place full of Spanish ingredients. Talk to vendors and pick up fresh items for the upcoming meal. Next, move to a private kitchen space behind a restaurant in Huertas. Here, a local chef will guide the small group in a hands-on cooking session. Begin with a sweet vermouth aperitif. Prepare a cheese plate and a Basque-style tapa. Observe as the chef makes crema catalana for dessert. Get involved by making a second tapa, croquetas, followed by traditional Valencian paella. The guide will provide tips and stories about each dish. End by sitting down to enjoy your prepared food with wine or beer.
