Meet your guide and baker and begin your workshop by putting on your apron and washing your hands. Get an overview of the intensive workshop and learn about the French bread law (Decree of 1993: only 4 ingredients allowed).
Learn how to feed the "levain" (sourdough) and feel the difference between organic flours. Shape your own individual loaves. Then, learn the art of "folding" butter into the dough to get those perfect, crispy layers. Cut and roll your own croissants.
While the pastries are in the oven, sit down and listen to the lively history of French royal scandals, Marie-Antoinette, and the croissant. Finally, taste the warm pastries straight from the oven with coffee, tea, and local French butter.
