Hello, my name is Marco De Simone. I've always worked in the food and wine and tourism sectors. I attended the Ippolito Cavalcanti State Hotel Institute in Naples. I developed my skills over the years working in the hotel and naval catering industry. I was fortunate enough to travel extensively. I lived in the United States, where I studied and learned English and Spanish, which I speak fluently. Knowing how to communicate, even before listening and observing others, has allowed me to gain respect and recognition from others, be they customers, colleagues, or friends. I'm sure we'll have fun during the tour, discovering places considered temples of Neapolitan gastronomy, discovering recipes that have been passed down through the generations, such as the original recipe for Pizza Margherita, a UNESCO World Heritage Site since 2017, and other historic recipes from the home cooking tradition, along with the related facts, anecdotes, and legends that have always been associated with them.

Tour description

THE FREE WALKING FOOD TOUR IS AN EXPERIENTIAL TOUR, focused in the historic center of Naples. We will start from Piazza del Plebiscito, then move to the Spanish Quarters where we will stop in front of the famous Pizzeria Brandi where the Margherita Pizza was born. We will tell the story of the pizza and its recipe and take photos of the plaque dedicated to the famous Pizzaiolo Raffaele Esposito, who was the creator of the tricolor pizza.

We will delve into the Spanish Quarters where we will have most of the activities and interaction with the locals. We will have the opportunity to visit "O' Vascio", a typical local street-front house now a Cultural Association of Neapolitan Gastronomy where we will learn to make real Neapolitan coffee and taste it along with sfogliatelle, a typical Neapolitan pastry. We will tell its story as guests of a couple, Umberto and Nunziatina, who will talk to us about local cuisine and various traditional Neapolitan recipes, such as the famous Ragù and Genovese. They will share their secrets for preparing these and other famous Neapolitan dishes, making us feel like locals by telling us about the menu based on the seasons and typical market products.

Afterwards, we will pass through "SPACCANAPOLI" which cuts the historic center in two. We will stop at the Pignasecca market, the largest and most famous in the city, where I will tell you the story of DOP Buffalo Mozzarella and we will taste street food like fried pizza and wallet pizza from the famous Fiorenzano fry shop, established in the 1800s and still owned by the founding family. Everything will be accompanied by recipes from the Neapolitan culinary tradition with anecdotes and amusing legends that take us back to the birth of the famous Fried Pizza and wallet pizza during World War II.
