The main characteristic of Moroccan bread (or khbuz bread ) is that it is flat and that it cooks completely against the walls of the oven. In this way, a product is obtained with much less crumb than “European-style” breads and that is absolutely succulent.
It accompanies all types of foods, but the reality is that it is so delicious that many consume this typical Moroccan food without any accompaniment , as if it were a bun.
The omnipresence of couscous:
If the tagine is essential to know and understand the basis of typical Moroccan food , couscous (or cous cous) is no less so. Like that one, it is a stew based on meat and vegetables but, in this case, the base is wheat semolina . In addition, all this is cooked with abundant chickpeas.
As important as the dish itself is the cooking broth , with which the couscous is then watered once on the table. That broth can also be the base of the harira. That is, the soup, by definition, of Moroccan cuisine.

In essence, harira is a soup made with the cooking broth of vegetables, various meats and legumes. To make it one of the most popular dishes in typical Moroccan food, tomatoes and aromatic herbs are added, such as mint or coriander .
