I always look for this type of tour wherever I go. The guide, Vivian, had extensive knowledge of Hanoi's food, culture, and even history. I was amazed by Vivian's ability to speak English. Even though I was the only person on the tour, she was still happy to serve me, which is what I call professionalism. You can't expect more than that.
